The answer was pretty straightforward. I had been making up my own recipes for years and I started to see at where I could bring down the calories in everything to stick (within reason, you understand) to a lower calorie diet and for the most part things were going reasonable well. Where I fell down was that when I had people to dinner, which I do on a very regular basis, I felt that no "diet food" had the wow factor that I like to present at dinner. I mean lets face it; one of the joys of inviting people to dinner is so that they can boost your ego raving about how amazing your food is. So I started to look at how I could turn my simple every day recipes into sensational dinner party worthy creations.
The result is this collection, my simple and sensational versions of the same calorie wise recipe that can be made for dinner on a Tuesday and a dinner to impress on Saturday. I am not a chef, nor am I a nutritionist and I do not hold myself out as either. I just love to cook and got tired of eating bad food when I tried to diet and decided to, somewhat ego manically, share my thoughts with the world.
