For some reason, simple foods seem to often taste better when made by someone else, so if possible enlist the help of others on occasion when making this dish.To call this a dish in fact is a stretch, this is a sandwich after all but a really good sandwich is a thing of beauty.My personal view to what elevates a sandwich from the mundane to the extraordinary is to be creative with fillings, donít skimp of fillings and above all use really good bread.The bread is the foundation and without a good foundation both your house and your sandwich will fall flat.
16 oz cooked skinless Chicken Breast, chopped 1/2 cup of not fat mayonnaise 1 teaspoon curry paste 1 green apple chopped 2 sticks of celery chopped 4 leaves of butter lettuce 8 slices of good grain bread
There really is no method here, it is really case of mixing all the ingredients except the lettuce, putting a piece of lettuce on a slice of bread, dividing the chicken between the slices of bread and topping with another slice of bread. It's a sandwich, not terribly complicated, but very very good.
We're talking picnic's ....the best way to serve these is to find a really fabulous location to picnic in.
